Paris, Filipino Food Festival, October 2019
You all know that the Philippine archipelago is my country of heart and that I want to settle there in retirement. You will not be surprised when I knew that a festival of Filipino cuisine was organized in Paris, I could not miss this event. After 3 stays in this archipelago, I have not yet tasted all the specialties.
This cuisine is unknown outside their borders. For example, there is no Filipino restaurant in Paris. Marseille and Lourdes have theirs. Paris, which calls itself the world capital of the kitchen, where you can taste and taste so much cooking variety, you will not have this chance. This festival is made for that. “Point Ephémère” is a beautiful place but unfortunately, this festival has far exceeded expectations. The room can hold 500 people, but more than 2,000 people wanted to discover this fabulous cuisine (the figure of 6,000 has been announced but remain simple). Only downside, no Halo-Halo …
A discovery of folk dances was proposed, which you will see a small editing and photos. I admit to be more interest on this part of the festival as you could see with the pictures.
Filipino cuisine (filipino: pilipino luting or pagkaing pilipino) is the traditional cuisine of the Philippines. It’s a cooking style that has evolved from an Austronesian base (shared with Malaysian and Indonesian cuisines). It has changed under the influence of Indian, Chinese, Spanish and American cuisine, in parallel with the major waves of influences that have enriched the cultures of the archipelago.
The main food is rice. Meals can be frugal, consisting of rice and fried salted fish, but can also be more elaborate; paellas and cocidos, of Spanish origin, are prepared for special occasions. The most popular dishes include: grilled meats such as lechón, charcuterie such as longganisa, dishes in sauce such as adobo, kaldereta, mechado, puchero, afritada, kare-kare, pinakbet, hamonado, soups like sinigang, noodle dishes called pancit. Lumpia and torta are also common in the archipelago.
